Banana Smiley Face Pancakes
2 large eggs
2 cups all-purpose flour
2 cups milk
2 cups mashed ripe bananas
1/4 cup granulated or brown sugar
1/4 cup vegetable oil
2 tsp. baking powder
1 tsp. baking soda
1/2 tsp. salt
Toppings:
fresh raspberries, raisons, peaches or nectarines, maraschino cheeries, syrup, sliced bananas, etc...
Beat eggs in medium bowl until fluffy. Beat in remaining ingredients.
Heat griddle to 375 degrees. Spray with cooking spray.
Pour 1/4 cup batter onto hot griddle. Cook pancakes until light brown.
Allow kids to choose from listed toppings to create their smiley face!
Au Gratin Brussels Sprouts
Place cooked brussels sprouts in a lightly buttered casserole dish.
Film lightly with whipping cream or white sauce.
Top with bread crumbs and grated cheese of your choice.
Broil 2-3 minutes, until the cheese melts and is bubbly.
Homemade Applesauce
You will need:
10 apples (peel, cut into quarters)
1/4 cup orange juice
2 tsp. cinnamon
2 tsp. vanilla
Directions:
Put all ingredients in a large pot
Boil, then simmer for 30-40 minutes
Serve and Enjoy!
Pumpkin Smoothies
You will need:
1/2 cup canned pumpkin
3/4 cup milk
1/2 - 1 cup frozen vanilla yogurt
1/4 tsp. cinnamon
1/8 tsp. nutmeg
2 tsp. brown sugar
Directions:
Combine ingredients in blender and puree until smooth.
Pour the smoothies into small glasses (this drink is rich) and garnish each with a dollop of vanilla yogurt or whipped topping. For a fun touch, add a pinch of cinnamon or a few colored sprinkles.
Oatmeal Pancakes
You will need:
1 1/4 cups milk
1 cup rolled oats
2 eggs
1 Tbsp vegetable oil
1/2 cup whole wheat flour
3 Tbsp granulated sugar
1 tsp baking powder
1/4 tsp salt
1/4 tsp cinnamon
Directions:
1. Combine the milk and rolled oats in a large bowl. Allow the oats to soak for at least five minutes.
2. Beat the eggs in a small bowl with a whisk.
3. Add the eggs and the oil to the oats, and mix well. Stir in the flour, sugar, baking powder, salt, and cinnamon.
4. Cook on a hot, lightly oiled griddle or frying pan, using about 1/4 cup of batter for each pancake.
